Pork with Sunflower Sprouts
In a large pan, cook 500g of pork mince with 2 tbsp of water on medium heat, stirring occasionally for 6-7 mins or until cooked.
Add 2 tbsp lemon juice, 2 tbsp fish sauce, 1 tbsp grated ginger, 1 small onion (sliced) and chili flakes to taste.
Cook for a further 3-4 mins, then add Sunflower Sprouts, chopped mint and coriander and toss lightly.
Serve on lettuce leaves and add more Sunflower Sprouts, chopped mint, coriander and chopped, roasted peanuts if desired. |
